No-Bake Lazy Cake (Chocolate with Biscuits Cake)


Serves: 4 persons

Preparation time: 10 min.

Ingredients:
  • 3 tsp cocoa powder
  • 1 cup sweetened condensed milk
  • 150 gr of biscuits

Recipe:

  1. In a bowl break the biscuits into medium pieces and put them aside.
  2. Add the powdered cocoa, then pour the condensed milk on them.
  3. Mix the contents very well until all biscuits are coated and stick to each other.
  4. Pour the obtained mixture into a cling film, and shape it like a circular cylinder, then wrap it tightly.
  5. Place it in the freezer for at least 2 hours.
  6. Unwrap the obtained loaf, cut it into slices, and your cake is ready.

Strawberry Cake


Serves: 5 persons

Total cooking time: 30 min.
Preparation time: 10 min.

Ingredients:
  • 2 eggs
  • 2 cups flour
  • 1/2 cup oil
  • 1/4 cup orange juice
  • 3/4 cup yogurt
  • 3/4 cup sugar 
  • 1 ts baking powder
  • 1 ts vanilla
  • 1/4 ts salt
  • 1 cup chopped strawberries

Recipe:

  1. Place all dry ingredients in a bowl, and mix them well.
  2. Start adding the liquid ingredients while whisking (except for the strawberries).
  3. After you've added all the ingredients keep whisking for at least 5 minutes to assure all the ingredients are well dissolved.
  4. Pour half the batter in the cake mold.
  5. Add some of the strawberries. Then fill the remaining batter above it (keep the pan around 2/3 full).
  6. Add the strawberries on the top of the batter.
  7. Bake at 180 °C for around 15-20 min and test if done.

Stuffed Zuchini



Serves: 2 persons


Total cooking time: 70-80 min.
Preparation time: 30 min.


Ingredients for Stuffing:
  • 2/3 cup rice
  • 200 gr minced meat
  • 1 finely diced tomato
  • Salt
  • Pepper

Ingredients for Zucchini:
  • 1 kg of hollowed zucchini
  • lemon juice
  • Tomato paste
  • 1 ground garlic clove
  • salt & pepper
  • vegetable oil
  • 1 tsp dried mint

Recipe:
  1. In a separate bowl, mix together the stuffing ingredients altogether very well.
  2. Stuff the hollowed zucchini (around 2/3 of it since the rice will increase in volume upon being cooked) with the prepared filling.
  3. Place the zucchini in the cooker, then add tomato paste, vegetable oil, water, and salt & pepper.
  4. After they come to boil, add the garlic and the lemon juice.
  5. Keep on low fire until well done (at least 1 hr).
  6. Finally, sprinkle some dried mint on the top upon serving.
