Ingredients for Rice:
- 1 cup Italian rice
- Hand-full Vermicelli
- 2 cups water
- Vegetable oil
- Salt
Ingredients for vegetables:
- 2 peeled and chopped carrots
- 4 zucchinis
- 4 artichokes
- 100 grs minced meat
- 1 onion
- 1 Tbsp pine seeds
- lemon juice
- Tomato paste
- 1 ground garlic clove
- salt & pepper
- vegetable oil
- 1 tsp dried mint
Rice Recipe:
- Wash the rice 3-4 times.
- Heat the oil, then place the vermicelli.
- When the vermicelli is pink, place the rice, then the salt.
- Place the water, and keep on low fire until the rice is done.
Vegetables Recipe:
- In a pan add vegetable oil, then add the onions.
- When the onions turn a little pink, add the pine seeds, then the meat and season it, and keep stirring until the meat is done.
- On the counter, wait for the meat to cool down, then stuff the zucchini and the artichoke with them.
- Place the vegetables in the cooker, then add tomato paste, water, and salt & pepper.
- After they come to boil, add the garlic and the lemon juice.
- Keep on low fire until well done.
- Finally, sprinkle some dried mint on the top upon serving.
