Orange Cupcakes





Serves: 10-12 cupcakes

Total cooking time: 30 min.
Preparation time: 10 min.

Ingredients:
  • 2 eggs
  • 1 1/2 cups flour
  • 1/4 cup oil
  • 1/2 cup orange juice
  • 3/4 cup sugar 
  • 2 ts baking powder
  • 1/2 ts orange zest
  • 1/2 ts vanilla

Recipe:

  1. Place all dry ingredients in a bowl, and mix them well.
  2. Start adding the liquid ingredients while whisking.
  3. After you've added all the ingredients keep whisking for at least 5 minutes to assure all the ingredients are well dissolved.
  4. Pour the batter in the cupcake molds (around 2/3 full).
  5. Bake at 180 °C for around 15 min and test if done.

3aysh l Saraya (Milk & Toast Pudding)



Serves: 6 persons

Total cooking time: 40 min.
Preparation time: 10 min.


Syrup Ingredients:

  • 1 cup of water
  • 2 cups of sugar (can be adjusted due to your own desire)
  • 1 tsp Orange blossom water
  • 1 tsp rose water


Pudding Ingredients:
  • 6 pieces of Dried toast, or soft toast without the edges
  • 3 cups cold milk
  • 3 tbsp cornflour
  • 1 tbsp Orange blossom water
  • 1 tsp ground pistachio.
  • Mcetkh

Syrup Recipe:

  1. Mix the water and the sugar, and place them on the oven.
  2. Keep stirring until the sugar is totally dissolved.
  3. Bring to boil for 1-2 minutes, add the orange blossom water and the rose water, then turn off oven.

Recipe:
  1. Place the toast pieces in the serving plate.
  2. Pour the syrup on them, till they become wet.
  3. In a separate pot, mix together the cold milk and the cornflour.
  4. Place the pot on the oven, on low temperature and keep stirring for 30 minutes, or till the mixture becomes a little thick.
  5. Add the mcetck and the orange blossom water then turn off the stove.
  6. Pour the milk mixture above the toast.
  7. You can decorate it by sprinkling some ground pistachio.

Cookies with Cutters





Serves: 3 dozens with small cookie cutters

Total cooking time: 30 min.
Preparation time: 20 min.

Ingredients:
  • 1 cup butter
  • 1 cup sugar
  • 1 large egg
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 2 3⁄4 cups flour

Recipe:
  1. Preheat oven to 200°C degrees.
  2. In a large bowl cream butter and sugar with electric mixer.
  3. Beat in egg and vanilla.
  4. Mix flour and baking powder.
  5. Add 1 cup at a time, combining after each addition.
  6. You will need to add last 3/4 cup by hand.
  7. Do not chill dough it will be stiff.
  8. Divide dough into 2 balls.
  9. On floured surface roll out to 1/8 inch thickness.
  10. Use any cookie cutter and cut away.
  11. Bake for 6-10 minutes or until light brown.

                    Rice Pudding


                    Rice Pudding is a kind of sweets made up of rice, sugar, and cheese. It is not light, but delicious.

                    Serves: 6 persons

                    Total cooking time: 30 min.
                    Preparation time: 20 min.

                    Ingredients:

                    • 1/2 cup rice
                    • 200 grs Czech Akkaoui cheese
                    • 3/4 cup sugar
                    • 1/2 Tbsp rose water
                    • 1 tsp Meskeh 
                    • 1/4 cup ground pistachio


                    Recipe:
                    1. Day earlier before preparing this plate, you have to sweeten the cheese, by placing it in water for 10 hours, and changing the water every couple of hours.
                    2. Boil the rice until well done.
                    3. Prepare a dry presenting dish to pour the recipe in when finished. 
                    4. Drain the cheese using a colander.
                    5. Put the rice in the blender and grind them until they look like cream.
                    6. Return the rice to the oven on low temperature, then place the sugar on them and keep stirring for 10 min.
                    7. Add the cheese and continue stirring but quickly this time. 
                    8. Add the rose water, and the Meskeh, stir for 1 more minute then turn off oven, then pour your pudding in the presenting dish.
                    9. Sprinkle some pistachio on it as a decoration, and it will give a nice flavor as well.

                    Notes:
                    It is preferred to use a non-stick cookware when preparing this dessert.
