Farfalle Pasta with Alfredo Sauce


Total cooking time: 20 min.
Preparation time: 10 min.

Ingredients:

  • 1 1/2 cups farfalle pasta
  • 200g free-range chicken diced into cubes
  • a knob of butter
  •  mushrooms
  • diced green pepper
  • 100 ml fresh cream
  • dried basil
  • dried rosemary
  • 1/2 a nutmeg, grated
  • salt & pepper
  • 1/2 cup grated Parmesan cheese

Recipe:
  1. Bring a large pot of lightly salted water to a boil. Add farfalle pasta and cook for 8 to 10 minutes, then drain.
  2. In a large saucepan, melt butter over low heat. Add salt, pepper and garlic salt.
  3. Add the chicken, season them with basil, rosemary, and nutmeg. Then stir 5 minutes until they are done.
  4. Add the mushrooms and the green pepper, and let them wilt.
  5. Add the fresh cream and let all the components mix together.
  6. Add the cheese to thicken the sauce.
  7. Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

Roasted Chicken with veggies


Serves: 2-3 persons


Total cooking time: 60 min.
Preparation time: 10 min.

Ingredients:
  • 1/2 kilo chicken fillet or a whole chicken
  • 1 squeezed lemon
  • 4 crushed garlic cloves
  • Salt
  • Vegetable oil
  • cinnamon stick
  • 3 cardamom seeds
  • 3 clove seeds
  • 2 Bay laurel leaves
  • Ginger (optional)
  • 1 cup of water
  • 2 carrots
  • 2 zucchinis
  • 1 cup broccoli
  • 1/2 cup mushrooms
  • 1/2 cup corn
  • sliced colored pepper
  • 1 Oven bag

Recipe:

  1. Season the chicken with salt and oil.
  2. Place the vegetables in the oven bag.
  3. Add the lemon juice, then place the garlic, cardamom, cloves, laurel leaves, and ginger.
  4. Let the constituents mix all together.
  5. Add the Chicken to the bag.
  6. Close the bag, then place them in the oven at 180 C for 40-50 minutes, or till the chicken is pink.

Homemade Chicken Crispy 2



Serves: 4 persons

Total cooking time: 60 min.
Preparation time: 20 min.

Ingredients:

  • 1/2 Kg fillet chicken breasts
  • 3 garlic cloves
  • 2 Tbsp all purpose flour
  • 1 tsp baking powder
  • 2 eggs
  • 1 cup crushed cornflakes
  • vegetable oil
  • cinnamon
  • basil (fresh or dried)
  • paprika
  • pepper 
  • salt


Recipe:
  1. Cut the chicken fillet the shapes you like.
  2. After that, place in a plate the flour, baking powder, salt, pepper, basil, cinnamon, and paprika (if you like), and mix all the constituents together.
  3. In another plate whisk the eggs and keep them aside.
  4. Place the crushed cornflakes in a third plate.
  5. Prepare the baking tray, put in it some vegetable oil, and turn on your oven at 180 °C.
  6. Bring the chicken fillets, for each piece do the following: put it in the flour plate until all covered, then place it in the eggs bowl, then in the cornflakes bowl. Then place it in the baking tray.
  7. After you finish all the fillet pieces, put the tray in the oven for 40 minutes.
  8. You can serve it with french fries, and cabbage salad.

Notes:
For a healthy meal, try to bake your crisps rather than frying them.

Creamy Mushroom Chicken with Corn Rice



Serves: 2 persons


Total cooking time: 30 min.
Preparation time: 15 min.

Ingredients for Chicken:
  • Chicken Breast
  • 1/2 cup fresh cream
  • 2 crushed garlic cloves
  • Salt
  • Olive oil
  • Paprika
  • basil
  • sliced green pepper 
  • sliced fresh mushrooms
  • 1/2 cup corn

Ingredients for Rice:

  • 1 cup Long grain rice
  • 2 cups water
  • 1 small diced onion
  • 1/2 cup corn
  • 1/2 ts turmeric
  • salt

Chicken Recipe:

  1. Slice the chicken breast into thin slices,
  2. Heat the pan and add some olive oil.
  3. Add the chicken breast, garlic, salt, paprika, and basil, and keep it till the color of the chicken is pink. Then flip it to cook the other side.
  4. Add the green pepper, mushrooms, and corn.
  5. When the chicken is done, add the fresh cream and let it boil for 5 minutes.

Rice Recipe:

  1. Wash the rice 3-4 times.
  2. Heat the oil, then place the onion. 
  3. When the onion is pink, add the corn, water, then salt and turmeric and let boil for 15 minutes.
  4. Add the rice, and keep on low fire until it is done.

English Chicken Pie

Adapted from Jamie Oliver's recipe, but modified by me!






Serves: 4 persons

Total cooking time:50 min.
Preparation time: 20 min.

Ingredients:

  • 500g free-range chicken (you can use breast or thigh)
  • a knob of butter
  • 1 bunch of spring onions
  •  mushrooms
  • corn
  • colored pepper (red, yellow, and green)
  • 1 heaped tsp plain flour (plus extra for dusting)
  • 1 tbsp fresh creme
  • 300ml chicken stock or water
  • a few sprigs of mint
  • basil
  • rosemary
  • 1/2 a nutmeg, grated
  • 1 sheet of pre-rolled puff pastry
  • 1 egg
  • salt & pepper
  • extra virgin olive oil.

Puff Pastry:
  • 1 1/2 cups all purpose flour
  • 1/4 tsp salt
  • 1 ts granulated sugar
  • 8 tbsp unsalted butter (cut into small pieces)
  • 4 - 5 tbsp ice water


Puff Pastry Recipe:
  1. Mix all dry ingredients together.
  2. Add the butter slices, and the water.
  3. With the pastry blender or your fingers combine all the ingredients together, until the dough comes together.
  4. Shape the dough into a flask disk, then cover with plastic wrap, and refrigerate for at least 30 minutes.


Chicken pie Recipe:

  1. Pre-heat the oven to 200°C. Chop up the mushrooms, spring onions, peppers, and slice the chicken into strips or bite-sized chunks.
  2. Heat a lug of olive oil and a knob of butter in a heavy-based pan over a medium heat. 
  3. Add the chicken, season it with salt and pepper, and cook for a few minutes. 
  4. Add the mushrooms, corn, colored pepper, and spring onions to the pan with a tablespoon of plain flour and give it all a good stir. 
  5. Mix in a generous tablespoon of fresh cream and some water, or chicken stock. 
  6. Finally add some picked mint leaves and a good grating of nutmeg. 
  7. Leave simmering for 10 min.
  8. Get your pastry out of the fridge and unroll onto a dry lightly floured work surface.
  9. Once your chicken filling has thickened up slightly, tip it into a ovenproof baking dish slightly smaller than the sheet of pastry. 
  10. Cover the filling with the sheet of pastry; don't worry about the edges, just tuck them in around the filling.
  11. Lightly beat the egg with a fork, then brush it over the top of the pie.
  12. Bake on the top shelf of the oven for around 20 minutes, or until gorgeously browned.

Homemade Chicken Crispy



Serves: 4 persons

Total cooking time: 60 min.
Preparation time: 20 min.

Ingredients:

  • 1/2 Kg fillet chicken breasts

  • 2 tbsp vinegar
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 2 Tbsp all purpose flour
  • 2 tsp cornflour 
  • 1 tsp baking powder
  • 2 eggs
  • vegetable oil
  • cinnamon
  • basil (fresh or dried)
  • pepper 
  • salt


Recipe:

  2. Soak them in a bowl containing the vinegar, crushed garlic, lemon juice, salt, pepper, basil, and olive oil for an hour in the fridge.
  3. After that, place in a plate the flour, cornflour, baking powder, salt, pepper, and paprika (if you like), and mix all the constituents together.
  4. In another plate whisk the eggs and keep them aside.
  5. Prepare the baking tray, put in it some vegetable oil, and turn on your oven at 180 °C.
  6. Bring the chicken fillets, for each piece do the following: put it in the flour plate until all covered, then place it in the eggs bowl, then again in the flour bowl. Then place it in the baking tray.
  7. After you finish all the fillet pieces, put the tray in the oven for 40 minutes.
  8. You can serve it with french fries, and cabbage salad.

Notes:
It is preferred to bake your crisps rather than frying them so that they won't be full of oil, to reduce the chance of having cholesterol later.
