Grilled Fish with White Rice and Sauteed Vegetables





Serves: 2 persons


Total cooking time: 10 min.
Preparation time: 5 min.

Ingredients for Fish:
  • 1/2 kilo fish fillet
  • Circular sliced lemon
  • 4 crushed garlic cloves
  • Salt
  • Olive oil
  • Dried coriander
  • Ginger (optional)
Ingredients for Rice:

  • 1 cup Long grain rice
  • 2 cups water
  • Vegetable oil or butter.
  • salt

Ingredients for vegetables:

  • 2 carrots
  • 2 zucchinis
  • 1 cup broccoli
  • 1/2 cup mushrooms
  • 1/2 cup corn

Fish Recipe:

  1. Cut the Fish into the desired size, then season it, with salt and oil.
  2. Place the lemon slice on it, then place some garlic, coriander, and ginger on the slice.
  3. Wrap the fish with an aluminum foil, or place it in an oven bag.
  4. Repeat for all fish, then place them int he oven at 180 C for 30-40 minutes.
Rice Recipe:


  1. Wash the rice 3-4 times.
  2. Heat the oil, then place the rice then the salt. 
  3. Place the water, and keep on low fire until the rice is done.
Vegetables Recipe:


  1. Cut all the vegetable into slices.
  2. Heat some olive oil in the pan.
  3. Place the vegetables, then season them with salt, and basil.
  4. Saute them until they become tender.

Veggie Lasagna





Lasagna can be served in many forms and using many stuffing choices.
This is only one of the choices using vegetables. You can add your choice of small chicken pieces or meat.
To deliver more healthy Lasagna, you can use brown lasagna sheets.

Serves: 6 persons

Total cooking time: 40 min.
Preparation time: 20 min.

Ingredients:


  • Lasagna
  • Mozzarella or Fondel cheese.

Red Sauce Ingredients:
  • 1 onion
  • grated carrot
  • grated zucchini
  • 100 gr. corn 
  • 100 gr. sliced mushrooms
  • colored pepper slices
  • salt 
  • grated nutmeg
  • grated or dried ginger
  • 1  tbsp tomato paste
  • olive oil
  • 1 cup water.
White Sauce Ingredients:

  • 4 cups milk
  • 4 Tbsp flour
  • 1 tbsp butter
  • salt


Red Sauce Recipe:
  1. Heat the olive oil.
  2. add the onions, carrot, zucchini, corn, mushrooms, pepper and cook for a few minutes.
  3. Season with salt, nutmeg, ginger and stir all together.
  4. Add tomato paste and water. 
  5. Let them boil for 10 minutes, then remove from oven.
White Sauce Recipe:
  1. Whisk the milk and flour and salt.
  2. Put the mixture on the stove and heat until boiling.
  3. Add the butter, and keep for two minutes until the mixture becomes thick. 

Lasagna Recipe:
  1. Put some oil at the bottom of a Pyrex container.
  2. Place a layer of Lasagna.
  3. Place a layer of the vegetable red sauce.
  4. Place a layer of the white sauce.
  5. Place a layer of the cheese.
  6. Repeat step 2-5 one more time.
  7. Place a layer of Lasagna and white sauce and cheese.
  8. Place your Lasagna tray in the oven at 160 °C, for 30 min. 
  9. Serve Hot.

Chocolate Cream Dessert






Serves: 6 persons

Total cooking time: 10 min.
Preparation time: 5 min.

Ingredients:
  • 2 cups milk
  • 2 ts powdered cocoa 
  • 60 gr. raw chocolate
  • 1/2 cup sugar (vary depending on the type of chocolate used: sweet or dark)
  • 3 ts starch stirred in 2 ts cold milk

Recipe:

  1. Put the milk in a pot and add cocoa and sugar to it, and mix well.
  2. Put the mixture on the stove, stir well while being heated.
  3. Add the chocolate and my continue stirring till it melts.
  4. When boiling add the starch and stir well for two minutes then remove from stove.
  5. Pour in glasses and put it in the fridge to cool and hold together.
  6. Feed your children chocolate cream without preservatives.

Lemonade




Serves: 1.5 L

Preparation time: 15 min.

Ingredients:

  • 5 oranges
  • 2 lemons
  • 3/4 cups sugar
  • 750 ml water

Recipe:
  1. Wash the lemons and oranges very well.
  2. Put them in a large bowl, and cut them into quarters, without peeling them.
  3. Add the sugar to them.
  4. Then, pour the water over the bowl.
  5. Start squeezing them with your hands, then remove the hard shells.
  6. After you're done with all the lemon and orange parts, place the pitcher and place above it the colander to strain the lemonade.
  7. Pour the lemonade mixture into the colander, then the lemonade will fill the pitcher.
  8. Dispose the remaining pulp.
  9. The procedure is explained in the figures below.

Broccoli Cream Soup




Serves: 6 persons

Total cooking time: 40 min.
Preparation time: 10 min.

Ingredients:

  • 500 gr. broccoli
  • 1 onion
  • 1 tbsp all purpose flour
  • 1 1/2 cup milk
  • 2 cusp chicken stock
  • 1 Tbsp butter
  • 1 tsp cornstarch
  • salt 
  • nutmeg


Recipe:
  1. Divide the broccoli into small flowers.
  2. Boil them with the onion for around 20 min.
  3. Place the boiled broccoli and onions in a colander.
  4. Then, put them in  a food processor to get them as a cream.
  5. In a pot on the stove, put the butter.
  6. When it melts add the flour and let it dissolve in the butter.
  7. Then, add the creamy broccoli and the chicken stock and salt and keep stirring.
  8. Grate some nutmeg over the soup.
  9. Dissolve the cornstarch in the cold milk, then add them to the pot.
  10. Keep boiling for 5 min. then turn the stove off.

Delicious Quick Pancakes



Makes: 6 pancakes (5 cm radius)

Total cooking time: 20 min.
Preparation time: 10 min.

Ingredients:

  • 1 cup all purpose flour
  • 1 cup milk
  • 1 egg
  • 1 Tbsp butter
  • 1 tsp baking powder
  • salt 
  • sugar


Recipe:
  1. Mix all dry ingredients together.
  2. Add the butter, egg, and milk, and whisk all together.
  3. Heat the pan.
  4. Pour some of the batter, wait 30 seconds, then flip it to the next side. Wait another 15 seconds then remove it.
  5. Repeat step #4 until you are done with the batter.

Notes:
You can eat pancakes with sweet condensed milk, jam, sweet yogurt, etc...

English Chicken Pie

Adapted from Jamie Oliver's recipe, but modified by me!






Serves: 4 persons

Total cooking time:50 min.
Preparation time: 20 min.

Ingredients:

  • 500g free-range chicken (you can use breast or thigh)
  • a knob of butter
  • 1 bunch of spring onions
  •  mushrooms
  • corn
  • colored pepper (red, yellow, and green)
  • 1 heaped tsp plain flour (plus extra for dusting)
  • 1 tbsp fresh creme
  • 300ml chicken stock or water
  • a few sprigs of mint
  • basil
  • rosemary
  • 1/2 a nutmeg, grated
  • 1 sheet of pre-rolled puff pastry
  • 1 egg
  • salt & pepper
  • extra virgin olive oil.

Puff Pastry:
  • 1 1/2 cups all purpose flour
  • 1/4 tsp salt
  • 1 ts granulated sugar
  • 8 tbsp unsalted butter (cut into small pieces)
  • 4 - 5 tbsp ice water


Puff Pastry Recipe:
  1. Mix all dry ingredients together.
  2. Add the butter slices, and the water.
  3. With the pastry blender or your fingers combine all the ingredients together, until the dough comes together.
  4. Shape the dough into a flask disk, then cover with plastic wrap, and refrigerate for at least 30 minutes.


Chicken pie Recipe:

  1. Pre-heat the oven to 200°C. Chop up the mushrooms, spring onions, peppers, and slice the chicken into strips or bite-sized chunks.
  2. Heat a lug of olive oil and a knob of butter in a heavy-based pan over a medium heat. 
  3. Add the chicken, season it with salt and pepper, and cook for a few minutes. 
  4. Add the mushrooms, corn, colored pepper, and spring onions to the pan with a tablespoon of plain flour and give it all a good stir. 
  5. Mix in a generous tablespoon of fresh cream and some water, or chicken stock. 
  6. Finally add some picked mint leaves and a good grating of nutmeg. 
  7. Leave simmering for 10 min.
  8. Get your pastry out of the fridge and unroll onto a dry lightly floured work surface.
  9. Once your chicken filling has thickened up slightly, tip it into a ovenproof baking dish slightly smaller than the sheet of pastry. 
  10. Cover the filling with the sheet of pastry; don't worry about the edges, just tuck them in around the filling.
  11. Lightly beat the egg with a fork, then brush it over the top of the pie.
  12. Bake on the top shelf of the oven for around 20 minutes, or until gorgeously browned.

Crispy Shrimps



Serves: 2 persons

Total cooking time: 30 min.
Preparation time: 20 min.

Ingredients:

Shrimps:
  • 1/2 Kg large raw shrimps
  • 2 Tbsp all purpose flour
  • 1 cup crushed cornflakes (original flavor) 
  • 2 eggs
  • vegetable oil
  • dried basil
  • pepper 
  • salt
Sauce:

  • 2 ripe tomatoes
  • 1 onion
  • finely chopped green pepper
  • 1 garlic clove
  • basil
  • corn
  • mushrooms
  • fresh mints
  • butter


Sauce Recipe:
  1. In a blender, place the onions, tomatoes, garlic, mint, salt, and basil and blend them all together.
  2. In a pot, put the butter, then add the blended sauce.
  3. Upon cooking the sauce, add the pepper, corn and mushrooms, and stir form time to time.
  4. Keep the sauce cooking after boiling for 5-10 min.
Shrimps Recipe:

  1. Make sure your shrimps are totally melted.
  2. Place in 3 different plates, flour seasoned with salt and basil, wisked eggs, and the cracked corn flakes.
  3. For each shrimp repeat this procedure: place in flour, then eggs, then cornflakes, then place it in a certain plate.
  4. For cooking the shrimps, place vegetable oil in a pan (about 2 cm height), then place the shrimps, and keep them for about 10 min with shuffling sides, until they are golden brown.


Notes:
You can serve the shrimps with white or yellow rice, or french fries.
You can also bake them instead of frying. it would take also 10 min in the oven at 180 °C.

Homemade Chicken Crispy



Serves: 4 persons

Total cooking time: 60 min.
Preparation time: 20 min.

Ingredients:

  • 1/2 Kg fillet chicken breasts
  • 3 garlic cloves
  • 2 tbsp vinegar
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 2 Tbsp all purpose flour
  • 2 tsp cornflour 
  • 1 tsp baking powder
  • 2 eggs
  • vegetable oil
  • cinnamon
  • basil (fresh or dried)
  • pepper 
  • salt


Recipe:
  1. Cut the chicken fillet the shape you like.
  2. Soak them in a bowl containing the vinegar, crushed garlic, lemon juice, salt, pepper, basil, and olive oil for an hour in the fridge.
  3. After that, place in a plate the flour, cornflour, baking powder, salt, pepper, and paprika (if you like), and mix all the constituents together.
  4. In another plate whisk the eggs and keep them aside.
  5. Prepare the baking tray, put in it some vegetable oil, and turn on your oven at 180 °C.
  6. Bring the chicken fillets, for each piece do the following: put it in the flour plate until all covered, then place it in the eggs bowl, then again in the flour bowl. Then place it in the baking tray.
  7. After you finish all the fillet pieces, put the tray in the oven for 40 minutes.
  8. You can serve it with french fries, and cabbage salad.

Notes:
It is preferred to bake your crisps rather than frying them so that they won't be full of oil, to reduce the chance of having cholesterol later.

Rice Pudding


Rice Pudding is a kind of sweets made up of rice, sugar, and cheese. It is not light, but delicious.

Serves: 6 persons

Total cooking time: 30 min.
Preparation time: 20 min.

Ingredients:

  • 1/2 cup rice
  • 200 grs Czech Akkaoui cheese
  • 3/4 cup sugar
  • 1/2 Tbsp rose water
  • 1 tsp Meskeh 
  • 1/4 cup ground pistachio


Recipe:
  1. Day earlier before preparing this plate, you have to sweeten the cheese, by placing it in water for 10 hours, and changing the water every couple of hours.
  2. Boil the rice until well done.
  3. Prepare a dry presenting dish to pour the recipe in when finished. 
  4. Drain the cheese using a colander.
  5. Put the rice in the blender and grind them until they look like cream.
  6. Return the rice to the oven on low temperature, then place the sugar on them and keep stirring for 10 min.
  7. Add the cheese and continue stirring but quickly this time. 
  8. Add the rose water, and the Meskeh, stir for 1 more minute then turn off oven, then pour your pudding in the presenting dish.
  9. Sprinkle some pistachio on it as a decoration, and it will give a nice flavor as well.

Notes:
It is preferred to use a non-stick cookware when preparing this dessert.

Kafta and Potato Tray




Kafta is an easy plate to cook. It contains meat and vegetables. Kafta is meat with finely chopped onions and parsley seasoned with salt and pepper.

Serves: 3 persons

Total cooking time: 1 hr
Preparation time: 20 min

Ingredients:

  • 250 grs Kafta
  • 2 medium potatoes
  • 2 medium tomatoes
  • 2 medium onions
  • 2 sweet green peppers
  • corn oil
  • tomato paste
  • salt and pepper
  • water


Recipe:

  1. Peel the potatoes, chop them into circular slices, fry them, and place them aside.
  2. Slice the tomatoes, peppers, and onions into circular slices and place them aside.
  3. Shape the Kafta into thin circular shapes, fry it, or bake it then let them cool out.
  4. In the baking try, put some corn oil. 
  5. Start placing the vegetables and kafta in the order you like, as shown in the figure.
  6. Add water, tomato paste, and season them with salt and pepper.
  7. Cover it with aluminum foil and bake it in the oven at 180 °C, for 30 min. 
  8. Remove the aluminum foil, and keep it in the oven for 10 more min to roast.
  9. Serve hot.
